  2. 3 spring onions, finely sliced
  3. 5 cm piece ginger, finely julienned
  4. 2 tbsp light soy sauce

  7. 3 tbsp sesame oil
  8. 1 big red chilli, finely julienned
  9. 1/2 white onion, finely julienned

  1. Got my fresh lemon sole from my local fishmonger. Place lemon sole onto a plate that is smaller than your pan or steamer. Sliced up ginger, onion, bell pepper and chilli the. top your fish with ginger, onion and bell pepper.
  2. Combine soy sauce and lime/lemon juice, then pour the mixture over the fish.
  3. Place the plate of fish on top of steamer. Add water into the pan that your steamer sit on. Turn the heat on high. Once the water starts to steam, place the lid on. Cook for about 12-15 minutes or until fish cooked (they will easily flake when you poked it with a fork).
  4. Just before the fish is ready, mix the vegetable oil and the sesame oil together in a small saucepan and heat until hot. Turn the heat off and get the hot oil ready to pour on the steamed fish.
  5. Remove the hot plate of fish from the steamer. Top with spring onion. Pour the hot oil over the spring onion to sizzle. Top with chilli slices, ground pepper and serve with steamed jasmine rice.
