  11. 1/4 tsp Pepper
  12. 1 Onion (chopped)
  13. 1 Bell Pepper (small, chopped fine)
  14. 1 Egg (beaten)
  15. 1/2 c Rice (uncooked)
  16. 1/2 tsp Salt
  17. 1 Tbsp Butter
  18. 1 c Boiling Water
  19. Meat and Cabbage for Natchinka:
  20. 4 c Cabbage (chopped)
  21. 1 c Onion (chopped)
  22. 1 /4 c Oil (optional)
  23. Fruit Filling:
  24. 1 lb Prunes
  25. 1/2 lb Apricots
  26. 1/2 c Pears
  27. 1 heaping Tbsp minute Tapioca
  28. 1/2 c Sugar
  29. Water (2" above fruit in saucepan - see Step 4)
  30. Chopped Nuts (optional)

Instructions to make to make Natchinka

  1. Dough: Mix all ingredients together and knead 10 minutes. Divide into 12 parts. Roll out each and fill with your favorite filling. Bake at 350 degrees for 20 minutes.
  2. Meat and Rice Filling: Steam rice in boiling water with salt and butter for 10-15 minutes. Set aside. Brown ground beef, onion, bell pepper, and pepper. Mix meat mixture with rice. If needed add more butter. Add one beaten egg and mix well.
  3. Meat and Cabbage Filling: Steam cabbage, onion, salt and pepper while stirring continuously. Do not brown or overcook. Cook ground beef in skillet and mix with the cabbage mixture. Cool.
  4. Fruit Filling: Cook fruit in water and sugar for about 1/2 hour or until tender. Water should be about 2" above the fruit in saucepan. When cooked, mash well with potato masher. Add the minute tapioca and cook until thick.
