  8. Let rise 2 hrs or until doubled
  9. Filling: saute garlic and onions in oil in a wok
  10. Add meat and stir fry
  11. Add soy sauce, oyster sauce and brown sugar
  12. Pour in dissolved cornstarch and cook quickly until meat is well glazed
  13. Remove from heat and cool
  14. Make buns: punch down dough and knead on floured board 3-5 mins
  15. Divide dough and roll ea half into a 12x2" log
  16. Cut each into 12 pieces, making 24
  17. Roll each into a ball, then roll flat into 3" circles
  18. Place 1 slice of egg and 1tsp filling in centre of each
  19. Gather sides of round, pinch together and twist
  20. Place pinched side down on parchment in steammer
  21. Cover with damp cloth and let rise 1 hr
  22. Steam for 20 mins
